White Bhut Jolokia Pepper (White Ghost)

The White Bhut Jolokia is a sub-variety of the famous Ghost Pepper (Bhut Jolokia, originating from India), notable for its light color and for being one of the pioneer peppers to break the 1 million SHU mark on the Scoville scale. Its color, which matures from a light green to a pale and brilliant creamy-white, gives it the nickname White Ghost.

Intensity and Flavor Profile

Its intensity is classified as Nuclear (Extreme Pungency Degree). Tests for this variety indicate a capsaicin concentration in the range of 800,000 to 1,000,000 SHU, matching the heat of the original Bhut Jolokia. The burn is known for being delayed, with a deceptive initial sweetness preceding an intense and persistent burn that can last for many minutes. Its flavor is very fruity, with citrus notes and sometimes a floral touch, which is the main difference perceived in relation to other Ghost Peppers.

Shape and Essential Culinary Use

The fruits have an elongated and conical shape, with slightly wrinkled skin, typical of the Jolokia family. Its unique creamy-white color makes it visually appealing in dishes. In culinary use, the White Bhut Jolokia is highly valued for the production of light-colored hot sauces, where extreme heat is desired without compromising the color palette. It is also excellent for being dehydrated and ground into powder, and is often used in chutneys, curries, and in seasonings for meats and dishes from Indian and Northeastern Brazilian cuisine. Due to its potency, it must be used with extreme moderation, where only a small portion is enough to spice up a full meal, and it must be handled with gloves.
