The Dragon's Breath Pepper (Capsicum chinense) is a legendary variety developed in the United Kingdom by Mike Smith, in partnership with Nottingham Trent University. Its name is a tribute to the dragon, the national symbol of Wales. It was originally developed as part of a research project to test a new plant food and to explore the potential of capsaicin oil as a natural topical anesthetic. This pepper is a true super-hot that transcends ordinary culinary use.
Dragon's Breath is classified as Nuclear (Extreme Pungency Degree).
Its Scoville level (SHU) was unofficially tested at 2,480,000 SHU, a value that, at the time, placed it above the Carolina Reaper. It is a heat that causes an immediate and intense burning sensation in the mouth and throat, with extreme potential that demands maximum precaution.
The flavor is reported as sweet and fruity, characteristic of the strongest chinense peppers. However, its heat is so potent that the flavor is quickly overshadowed by the burn. The capsaicin is so concentrated that its essential oil has been studied as a potential anesthetic, underlining its numbing power.
The fruits are typically small, red, and wrinkled, often presenting an irregular shape and bumps that indicate their extreme concentration of capsaicin. Visually, they resemble a hybrid between the Carolina Reaper and the 7 Pot Infinity.
Due to its extreme heat, Dragon's Breath is not recommended for fresh consumption or in large quantities, with its use being limited and reserved: Extreme Sauces, where it is used in minimal concentrations to achieve a level of heat that few peppers can match. Due to its intensity, the use of gloves and even a mask/goggles is recommended when handling it.
