The Dedo-de-Moça (Lady's Finger) is one of the most popular peppers in Brazil, belonging to the Capsicum baccatum species. It is native to the Americas and stands out for its versatility and accessible heat level, being a staple in both traditional and modern Brazilian cuisine.
This pepper has a mild to medium heat level, generally ranging from 5,000 to 15,000 Scoville Units (SHU). The flavor is fresh, slightly fruity, and with herbaceous notes. When dehydrated, it is used to produce Crushed Red Pepper (Pimenta Calabresa), which has a more intense and smoky flavor.
Its name is inspired by its shape: long, thin, and slightly curved fruits. It reaches a bright, vivid red color when fully ripe. Fresh fruits are quite fleshy, with a medium size between 5 to 10 cm.
Perfect for vinaigrettes and salads, sweet and sour preserves and jams, and as a decoration. It is also the base for the famous Calabresa flakes used in pizzas and pastas.
