The Peter Pepper (Capsicum annuum) is an ancestral pepper world-famous for its unusual and suggestive shape, anatomically resembling a male organ. Originating from the United States (Texas and Louisiana), it is a garden classic that balances its ornamental novelty with a usable heat in the kitchen. The fruits generally mature to red, but orange or yellow variants also exist.
Unlike the previous super-hots, the Peter Pepper has a Medium heat level, making it accessible and versatile. Its SHU (Scoville Heat Units) typically ranges between 10,000 and 23,000 SHU, placing it in the same spiciness range as the Serrano pepper or even slightly hotter than the top of the Jalapeño scale. The heat is clean and pleasant, without the extreme intensity of the Bhut Jolokia or Reaper. The flavor is fresh, bright, slightly sweet and vegetal, comparable to Jalapeño or bell pepper, but with more pungency.
Its peculiar shape is its most striking feature, measuring about 5 to 10 cm in length. Although often grown as an ornamental curiosity, the Peter Pepper is an excellent culinary pepper. It is ideal for pickles (where its shape is preserved), fresh salsas, spicy vinegars, and for adding a balanced touch of heat to stews and stir-fries where a vegetal flavor is desired. It can be used as a direct substitute for Jalapeño and Serrano peppers in any recipe requiring medium heat.
