The Marmande Tomato (Solanum lycopersicum) is an ancient, heirloom, and highly traditional variety, originating from the town of Marmande in southwestern France. Known and cultivated for over a century, it is a determined or semi-determined growth cultivar, adapting well to variable climates. The Marmande is widely valued in Europe and worldwide as a standard for flavor and fleshy pulp for cooking.
The flavor profile of the Marmande Tomato is considered classic and balanced. It has a pleasant combination of acidity and sweetness, giving it an intense and complete flavor, very different from modern hybrid tomatoes. Its pulp is very fleshy, dense, and juicy, with few seeds. This robust texture makes it ideal for slicing and raw consumption, as it holds its structure well.
The Marmande is recognized by its unique appearance. The fruits are large (150g to 250g) and have an irregular, slightly flattened, and ribbed shape. The ripening color is a deep and bright red. A notable feature is the shoulder area, which often remains slightly green or dark even when ripe, reinforcing its rustic and traditional look.
