The Carolina Reaper (Capsicum chinense), originally named 'HP22B', is the undisputed queen of heat and has held the Guinness World Record for the world's hottest pepper since 2013.
Created by Ed Currie, the Carolina Reaper reaches peaks of over 2,200,000 Scoville Heat Units (SHU). This nuclear intensity is hundreds of times higher than a traditional Jalapeño, recommended only for true extreme heat enthusiasts.
Despite its aggressive heat, the Carolina Reaper is distinguished by a complex and fruity aroma, with notes of cherry, citrus, and even chocolate. This initial sweetness is quickly followed by a long-lasting heat wave.
The fruits are vibrant red, wrinkled, and feature a "scorpion tail" at the bottom. Primarily used for super hot sauces, chutneys, and powders. It is excellent for seasoning red meat or tomato-based Italian dishes.
Handling the Carolina Reaper requires maximum caution. Using gloves is essential to avoid contact with skin and eyes. Use in minimal quantities.
