The Padrón Pepper (Capsicum annuum) is a Spanish delicacy from Galicia, famous for the saying: "Pimientos de Padrón, unos pican e outros non" (Some are hot, some are not). Most are mild, but every now and then, one is unexpectedly spicy.
Padrón is predominantly "Mild", with most fruits near 0 SHU. However, spicy ones can reach up to 2,500 Scoville Units (SHU). This makes them perfect for beginners who enjoy a bit of a surprise.
Fruits are small (5 cm) and harvested while yellowish-green. They have a mild, sweet, and vegetal flavor. The traditional way to eat them is fried in olive oil until the skin blisters, served with sea salt as a classic tapa.
