The Carolina Reaper Chocolate is a color variation of the infamous Carolina Reaper (which was once officially the hottest pepper in the world). Belonging to the species Capsicum chinense, it was developed to present an even more complex and earthy flavor, while maintaining its characteristic nuclear heat.
Degree of Pungency (Extreme): The Chocolate version is almost as intense as its red counterpart, and some specimens can reach the same maximum level of capsaicin. Its heat level ranges between 1,800,000 and 2,200,000 Scoville Units (SHU). This heat is explosive and prolonged, only recommended for extreme spicy enthusiasts.
Distinct Flavor: The flavor of the Chocolate Reaper is where it stands out. It is fruity and surprisingly sweet (before the heat takes over), but with strong notes of chocolate, smoke, and earth. This complexity makes it the favorite choice for making Super Hot sauces based on chocolate, barbecue, or for use in dark meat dishes.
Shape and Color: The fruit is rough, wrinkled and possesses the famous pointed "scorpion tail" of the Carolina Reaper. Its color matures from green to a deep and intense brown (chocolate color), which gives it its name.
Use and Precaution: Due to its extreme heat, it is essential to handle it with gloves and extreme caution. Its use is reserved for gourmet hot sauce production, spicy oils, or for drying and grinding into spice powder. A single sliver can be enough to season an entire pot of chili or a large stew.
The Carolina Reaper Chocolate is the ideal pepper for the spicy lover who demands maximum heat but with a sweet and smoky flavor profile.
