The Habanero Mustard Pepper (Capsicum chinense) is a colorful variation of the classic Habanero, belonging to the species that includes some of the hottest peppers in the world. Originating from the Yucatán Peninsula in Mexico, or with strong ties to the Caribbean, this variety is notable not only for its intense heat, but also for its unusual color and its complex, fruity flavor profile which, like all chinense, is very aromatic. It is the ideal pepper for those who want a heat level approaching the extreme, but with an exotic and visually appealing touch.
Habanero Mustard is classified as Super Strong (Very High Pungency Degree).
Its Scoville level (SHU) is estimated between 200,000 and 300,000 SHU, placing it firmly in the Super Hot category, alongside the traditional Habanero or Scotch Bonnet. The heat is described as an intense and lasting burn that spreads quickly, characteristic of chinense varieties.
The flavor is typical of Habaneros, being fruity, floral, and sweet, with citrus notes. However, the Mustard variety tends to present a subtle acidity and a flavor that some describe as slightly earthy, enhancing its exotic character. The combination of its fruity flavor and extreme heat makes it excellent for cooking with bittersweet contrast.
The fruits have the classic lantern or Scotch Bonnet shape, measuring about 3 to 6 cm. Their maturation color is their differentiator: they evolve from green to a Deep Mustard Yellow or Amber, sometimes with a wrinkled surface.
This pepper is highly sought after for preparations where heat and fruity flavor must be the focus, being essentially used in: Hot Sauces (fermentation or vinegar-based), where its color and fruity flavor create a gourmet product, and Chutneys based on mango, pineapple, or other fruits, as the sweetness of the fruit balances the heat.
